From the process of extraction of oil, results a solid matter, the olive-containing residual oil which was not possible to extract by physical or mechanical processes. This oil is extracted in most cases by solvent (hexane), the same one used in the extraction of oil from seeds and it is considered crude olive oil pomace.
This oil, like all other oils to be edible, it must be refined, resulting pomace oil refined, with acidity expressed as oleic acid, of not more than 0.3%. As with the refined olive oil, also oil pomace, to be marketed has to be allotted with Extra Virgin Olive Oil and Virgin Olive Oil then constituting the pomace oil, with acidity expressed as oleic acid, not more than 1.0%.
